It’s conkie time

With National Independence celebrations in the air, it’s conkie time in Barbados.
And Megan Sealy, well known for her conkie cooking for more than 40 years started production last month because of requests from patrons.“I get great satisfaction when people say they really taste good,” she says.What’s her secret:? “It’s the texture and the colour of the pumpkins and the corn meal that are critical to a great tasting conkie.”                    
Her biggest challeng is sourcing  banana leaves – Tropical Storm Tomas destroyed many –  and finding just the right pumpkins. (MS)
