The 2011 Barbados culinary team for this year’s Taste of the Caribbean competition left yesterday afternoon with their sights set not only on doing well but capturing some of the major titles.
The team, under the guidance of kitchen manager Henderson Butcher, is taking part in the six-day competition organized by the Caribbean Hotel and Tourism Association (CHTA) from tomorrow to Sunday in Miami.
Over the past three months, the team was in training at The Spa Restaurant at Sandy Lane using the criteria and guidelines of the competition in which they used the 22-item mystery basket concept to a starter, main course and dessert.
In the upcoming competition, the team will create 40 plates of each course within four-and-a- half hours.
