Many Barbadians love to have pork and ham for Christmas.

But how many give a thought to how the meat gets on their tables?

The WEEKEND NATION visited two abattoirs – Southern Meats Inc. at Balls Plantation, Christ Church, and the one in the Six Roads Public Market, St Philip, to get a close-up look at their operations and to find out if business was booming this holiday season.

At Six Roads, quality control officer with the Ministry of Agriculture, Fabian Gittens, explained the process.

“We do anti-mortem and post-mortem inspections – before and after slaughtering – of all the animals to make sure the public gets a product that is fit for human consumption. They are inspected for any noticeable or notifiable diseases, any causes for disease or contamination, including from the environment or from personnel,” he said.
