Are you where you’ve always wanted to be?

Yes, most definitely. I am fortunate to be able to live and work in such a beautiful island, and even more so with such a great professional team as the Sugar Bay/Bougainvillea family.

What is your biggest professional challenge?

My challenge is to motivate and inspire our food and beverage/culinary department to be recognised as number one in Barbados.

What is your biggest life challenge?

In this business, my challenge is to find time to spend quality time with family and friends.

When you look to the future, what do you see?

I see great success for Sugar Bay and hopefully with myself and the team being together for many more years.

What is your favourite pastime?

Barbados has some of the best beaches in the world, so of course, I really enjoy spending time in the ocean.

What is your favourite meal?

I love simple fresh locally produced food so it would have to be lemon pepper grilled Mahi Mahi with garlic sautéed sweet potatoes and crisp tossed salad with feta cheese. Of course, accompanied by a cold Banks beer.

On Saturday nights, where are you likely to be?

If not at work, I will most often be found relaxing at home watching a movie with my wife and son.

What upsets you the most?

Negative gossiping people who have no focus or ambition in their lives.

What is your guiding philosophy?

Work hard and be true to your beliefs and life goals.

If you had the chance to manage Barbados for a day, what would you do?

I feel that I would create a National Clean Up Barbados Day as many areas are becoming neglected.

Paul Hamilton is executive chef at Sugar Bay Resort.
