Ike Greene is executive chef of But, Of Course!

Are you where you’ve always wanted to be?

Yes! But I view life as a journey and there is always room to learn and grow .

What is your biggest professional challenge ?

I have been passionate about my profession for many years. The biggest challenge is understanding and keeping up with the changes .

What is your biggest life challenge?

To stay informed and always be prepared.

When you look to the future, what do you see?

When I look to the future , I see the construction of what I have and have been building in a positive light .

What is your favourite pastime?

Entertaining friends, I love to cook and I have literally travelled the world eating and dining, so I love to share to that with friends who are foodies.

What is your favourite meal?

Paella, a Spanish dish. Why? Because it’s communal, you can share.

On Saturday nights, where are you likely to be?

With friends hanging out, eating delicious food and enjoying music and old movies .

What upsets you the most?

That’s a tough one. Things happen but I have learnt to release and let go .

What is your guiding philosophy?

To be the very best, so that others would see the light that shines from within. That will spark the light in them for a brighter future.

If you had the chance to manage Barbados for a day, what would you do?

I would call on each citizen to work together to make this a better home for all of us. As the African proverb says “it takes a village”. I would also help the elderly, clean our streets and  gaps and help to feed those who are needy. (SC)
