Since the Colony Club hotel at Porters, St James, introduced its organic garden, it has sought to host monthly farmers’ markets on its grounds.
Guests can view cooking demonstrations using the produce and learn of the medicinal properties of the different herbs and vegetables.
General manager Gayle Talma said the fair gives guests of the hotel the opportunity to see the produce grown as well as how it can be used.
The garden which consists of kale, lettuce, beets, tomatoes, mint, parsley and dill, among other herbs, is irrigated through an aquaponics system. Operations manager Lisa Batson said the produce grown is used in the kitchen, but since the garden is small it is not a large-scale contribution. (LK)
