INGREDIENTS

Ham​                  1​ ​large​ ​whole

Cherry​ ​wine​        1​ ​cup

Brown​ ​rum         1⁄2​ ​cup

Nutmeg              1​ ​tsp

Cumin                2​ ​tbsp

Sugar                 1​ ​cup

GLAZE

Toast​ ​cumin​ ​and​ ​nutmeg​ ​in​ ​the​ ​bottom​ ​of​ ​a​ ​medium​ ​pot. When​ ​fragrant​ ​add​ ​​cherry​ ​wine and​ ​rum​ ​and​ ​reduce​ ​by​ ​1⁄4.​ ​Add​ ​sugar​ ​and​ ​reduce​ ​to​ ​the​ ​consistency​ ​of​ ​​ ​syrup.

Thaw​ ​ham​ ​if​ ​frozen,​ ​preheat​ ​oven​ ​to​ ​325​​°F.​ ​Score​ ​ham​ ​skin​ ​in​ ​a​ ​diagonal​ ​pattern,​ ​place ham​ ​on​ ​try​ ​in​ ​roasting​ ​pan​ ​on​ ​wire​ ​tray.​ Fill​ ​the​ ​bottom​ ​of​ ​the​ ​pan​ ​with​ ​about​ ​a​ ​centimetre of​ ​water.​ ​Cover​ ​the​ ​ham​ ​with​ ​foil​ ​and​ ​bake​ ​for​ ​2​ ​hours​ ​(depending​ ​on​ ​the​ ​size​ ​of​ ​the​ ​ham). Ham​ ​should​ ​read​ ​140°​F​ ​at​ ​the​ ​centre.

Turn​ ​up​ ​the​ ​oven​ ​to​ ​400°F,​ ​glaze​ ​ham​ ​with​ ​cherry​ ​cumin​ ​glaze​ ​and​ ​return​ ​to​ ​oven​ ​for​ ​10 minutes,​ ​repeat​ ​until​ ​ham​ ​skin​ ​is​ ​crispy​ ​and​ ​a​ ​deep​ ​golden​ ​brown.
