WITH EFFORTLESS SKILL, Wellington Rowe slices slivers of skin off a slab of shark with a large, sharp knife.
He marks precise lines in the hefty chunk of flesh, reducing it into near identical sizes before handing them off to be bagged, then sold to a waiting customer at a rented stall in the Berinda Cox Fish Market, Oistins.
Almost immediately after completing the sale, Wellington swiftly cleans the knife, washes the cutting board, and prepares for his next customer.
A few feet away in the fish processing unit, Wellington’s wife, Antonia Sargeant-Rowe, best known as Pat, cleans and ices some fresh-off-the-boat mahi mahi (dolphinfish to Bajans). Their son Romario moves between his parents, transporting ice, answering customers’ queries, or ringing up sales.
