Bajans top chefs

TEAM Barbados chopped, diced, stirred and cooked their way to the top prize with their signature dish of a chocolate sweet potato croquette, served with a surf and turf poached chicken medley of vegetables and a cream of celery and tomatoe sauce.

The Bajans dethroned Bonaire in the 2015 edition of the Caribbean Juniour Duelling Challenge at the weekend.

The competition, now in its tenth year, hosted junior chefs from Anguilla, Bonaire, Dominica, Grenada, St Croix, St Lucia, St Vincent and the Grenadines, Trinidad and Tobago and host country Barbados.

Producer, chef Peter Edey, implored the young chefs to endure and continue to be visionaries within the culinary field. “Our culinary culture is alive and will live on now more than ever.”
