In fact, creating and implementing good recipes with silent doctors is a personal way of maintaining good health.
Today, I am presenting healing and preventive recipes provided by Wilwore Jordan, a chef with more than 15 years’ experience.
Mr Jordan is a multigold and award-winning chef and a member of the Barbados Culinary team since 2010.
He said that these awe-inspiring recipes promote the use of healthy eating using Barbadian-grown silent doctors.
He is also an Alleyne School alumnus and is featured on the Super Centre 2012 calendar.
The menu is poached dolphin stuffed with Bajan seasoning; turmeric and ginger-infused breadfruit; sautéed spinach with nutmeg and garlic accompanied by hand-picked grapefruit salsa.
Poached Dolphin Stuffed With Bajan Seasoning
12 ozs dolphin, seasoned
Juice of ½ lime
Court bouillon (enough water to cover fish, 1 small bay leaf, 1 clove garlic, mixed herbs, 1 tbsp chopped onion)
Method:
Place court bouillon in an appropriate saucepan; bring to the boil.
Season to taste.
Add dolphin and gently simmer until desired doneness.
Turmeric And Ginger Infused Breadfruit
6 ozs breadfruit, cooked and crushed
1 tbsp chopped chives
½ tsp turmeric, powdered
1 tbsp onion, diced
2 tbsps olive oil
1 tsp ginger, grated
Method:
Sauté onion, ginger and turmeric in olive oil; season to taste.
In a mixing bowl combine breadfruit, sauté mixture and chopped chives.
Sautéed Spinach With Nutmeg And Garlic
1 handful spinach
½ tsp nutmeg, grated
2 cloves garlic, chopped
1 tbsp olive oil
Method:
Sauté ingredients.
Grapefruit Salsa
½ grapefruit, segmented
1 tbsp cilantro, chopped
Juice of ½ lime
½ tsp scotch bonnet pepper, minced
1 tbsp green sweet pepper, chopped
Method:
In a bowl, gently toss ingredients.
